Ingredients:

350 gr. Butternut Pumpkin

400 gr. Whole Grain Pasta

80 gr. Baby Spinach Leaves

500 gr.Roast Chicken

100 gr. Basil Pesto

Preparation:

Preheat oven to 200 C. Line a baking tray with baking paper. Place the pumpkin on the tray and spray with olive oil spray. Bike, turning occasionally, for 20-25 mins. or until tender and golden brown.

Meanwhile, cook pasta in a large saucepan of boiling water. Drain.

Place the pumpkin, pasta, spinach and pesto in a large bowl. Toss to combine. Divide among serving bowls.
